In the last 60 years, Americans have transformed the way they eat so that we are currently among the fattest and least healthy people on earth, along with all the related self-inflicted injuries that obesity brings. Worse, our dietary choices combined with our market power are disrupting ancient farming patterns across the globe. Perhaps worse still, we have lost much of the enjoyment people of other cultures get from their food along the way.
Not everyone is sitting still for this. The Slow Food movement is one of the fastest-growing political movements there is right now, and more are joining every day. This class will detail the route that led us to where we are and, with luck, will help to point the way back.
